Slow cooker beef ramen recipe

This is a super easy, flavourful broth that is comforting and nourishing. It's perfect for autumn dinners. My slow cooker is my trusty friend and has been with me for many years. It literally feels like someone is hugging me when I come to eat the delicious and wholesome food it has prepared for me at the end of a long day.

Slow cookers offer many benefits including:

  1. Easier digestion of the nutrients and food

  2. Supports busy times, therefore aids healthier eating patterns

  3. Nutrient retention due to the slow cooking process

  4. Time saving and perfect for busy lifestyles

  5. Less washing up as everything tends to cook in the one pot

  6. Great for meal prep as you can cook large portions easily and divide for the freezer

Slow cooker beef ramen recipe

Serves 4

Ingredients

1 or 2 tbsp of red curry paste depending on spice tolerance

Juice of 1 lime

2 garlic cloves chopped

1 tbsp fish sauce

1 tbsp soy sauce

1 pack of noodles

400g coconut milk

500ml beef stock or homemade

2 cm of fresh ginger diced

2 spring onions chopped

1 Chinese cabbage sliced

2 carrots cut into ribbons

1 cup of mushrooms sliced

1 cup of sugar snaps

Beef strips

Method

Place everything into the slow cooker apart from the noodles. Cover and cook on high for 6 hrs. Cook for a further 2 hours on low until beef is very tender.

Add the noodles at the end and cook on high for around 15 minutes until they are cooked through.
