Smoked salmon breakfast muffins

This is an easy and super delicious breakfast idea.

These breakfast muffins with smoked salmon, spinach, and watercress are delicious. They are gluten-free and protein packed. And, if there are any leftovers, keep them in the fridge in a sealed container for the next day. Not that there will be any leftovers, well there never are in my home!

Makes 6 muffins

Ingredients

3 spring onions chopped

50g smoked salmon

5 large eggs

seasoning

Handful of fresh chopped parsley

Handful of watercress and spinach chopped

Method

Preheat oven to 180c Use a little coconut oil to grease a muffin tray.

Beat the eggs, add the remaining ingredients, and mix well in a bowl.

Spoon the mixture into the muffin tray. Bake for 20 minutes or until golden brown on top and cooked through.
