Carrot Pakoras recipe

These pakoras are a delicious healthy addition to any Indian curry night. They are great as a side or to top your curries. They are super simple to make and taste so good.

Serves 2 (3 each)

Ingredients

2 carrots grated

1 red onion sliced

1/2 red chili chopped (if you aren’t got with too much spice go easy)

60g gram flour

1 tbsp curry powder

Pinch of salt

Method

Preheat the oven to 180c. Line a baking tray.

Add the onion, carrot, and chili to a bowl. Then add the gram flour, curry powder, salt, and 1 tbsp of water.

Massage the mixture for a minute and squeeze it together to form a mixture.

Scoop 6 handfuls of the mixture and shape them into round ball shapes. Drizzle a little olive oil over them.

Place in the oven for 20-25 minutes until golden and a little crispy.
