Family favourites: prawn Thai green curry recipe

This Thai green curry is a great recipe for midweek when time is short but you really need something that is tasty, nutritious, and hits the spot. It’s also made in my favourite one pot method so there is less washing up!

Recipe

2 tbsp green curry paste

1 2cm small piece chopped fresh ginger

1 garlic clove diced

1 tsp mustard seeds

1 tsp ground turmeric

1 diced onion

1 courgette chopped

1 handful of fresh spinach

1 tbsp fish sauce

400g tinned coconut milk

150g cooked prawns

A good squeeze of fresh lime juice

Serve with a side of rice.

Method

To a pan add a little oil and add the onion, garlic, and curry paste. Mix together and add the ginger, mustard seeds, and turmeric.

Add the fish sauce and the prawns. Give a good stir to mix. Add the coconut milk. Allow to cook for 15 minutes.

Next, add the spinach and courgette and allow to cook for 5 minutes.

Finish with a squeeze of lime and a further 5 minutes cooking.

Serve with a bowl of rice and enjoy!
