Batch cooking: nourishing meat-free make ahead meals for the freezer

Want to know what every busy person's best friend is? Yep you guessed it, batch cooking. Your freezer is your best friend. Healthy living means figuring out what's important to you and investing in those things.

I invest 1-2 hours usually on a Sunday which means:

  • Less stress

  • Takes the pressure away

  • More likely to stick with healthy eating when time and motivation are low

  • Saves money

  • Less likely to order takeout and eat processed foods

  • More time to do the things you love without compromising nutrition and lifestyle

  • Less thinking required

When you get out your little container full of nourishing homemade ingredients from the freezer, it’s almost as if someone is giving you a hug.  Looking after YOU.

I hope these recipes provide a nourishing rest bite from cooking when times are busy.

Moroccan stew

Ingredients

1 red onion diced

3 garlic cloves chopped

1 red pepper deseeded and chopped into pieces

400g chickpeas rinsed and drained

375g butternut squash chopped into 2cm pieces

400g tinned chopped tomatoes

1 courgette chopped into pieces

Seasoning

2 tsp ground coriander

2 tsp ground cumin

¼ tsp ground cinnamon

½ tsp chilli flakes

Method

On a medium heat on the hob, gently soften the onions in a casserole dish with a little butter. Add the spices and cook through for 2 minutes.  

Add the other ingredients, stir through and allow cook for 25 minutes on a medium heat.  Add more water if needed.

Lentil curry

Ingredients

1 onion

3 garlic cloves

800g tinned lentils

Juice of 1 lime

150ml stock 

400ml coconut milk

4 cups spinach

45g tomato paste

Spice mix

2 tbsp ground coriander

1 ½ tbsp ground cumin

1 ½ tsp garam masala

2 tsp turmeric

Good pinch of sea salt and black pepper

Method

To medium heat add the onions with butter to a casserole dish and soften for a few minutes.  

Add the spice mix and stir through.

Add the other ingredients apart from the spinach and allow to cook through for 15 minutes.

Add the spinach and allow to wilt with the heat for 3 minutes.
