Juicy plum cake recipe
Here's a deliciously moist cake to bake over the weekend. Using my favourite fruit at this time of the year, plums. The cake is dairy free and using ground almonds, is gluten free. It's very easy to make and is super yummy.
Ingredients
175g coconut oil
160g brown sugar
3 eggs
300g ground almonds
1tsp baking powder
1 drop of vanilla essence
250g plums destoned and sliced
Method
Cream the coconut oil and sugar together.
Add the eggs individually and combine.
Add the remaining ingredients and combine.
Pour the mixture into a greased cake tin. Top the cake with the sliced plums forming a pattern of your choice.
Bake in a preheated oven at 180c for 55-60 minutes or until an inserted skewer comes out clean.
