Coconutty beans

Every kitchen needs a good meat-free bean dish, and this is our go-to.

Ingredients (Serves 4)
1 tbsp olive oil
1 small red onion, finely sliced
1 red pepper, diced
2 garlic cloves, minced
1 tsp smoked paprika
1/2 tsp chili flakes (adjust to taste)
1 tsp dried thyme
400 g jar of beans in broth (I recommend Bold Beans)
1/2 cup sundried tomatoes, chopped
400g coconut milk
Salt & pepper, to taste
Fresh basil to garnish

Instructions
1. Heat olive oil in a large pan over medium heat. Sauté red onion and red pepper until soft, 4–5 minutes.
2. Add garlic, smoked paprika, chilli flakes, and thyme; cook 30 seconds until fragrant.
Stir in beans and sundried tomatoes, cooking 2–3 minutes to warm through.
3. Pour in coconut milk and simmer gently for 10–12 minutes, stirring occasionally.
Taste and season.
4. Serve warm, garnished with fresh herbs. Delicious with crusty bread as a vessel.
