Green shakshuka recipe

A twist on the classic shakshuka using an abundance of spring greens. This recipe is full of flavour and bursting with green goodness. It is such a great breakfast to start your day.

Serves 2

Recipe

1 large onion, chopped

1 leek sliced

1 fennel bulb, finely chopped

2 tsp dried thyme

1 courgette grated

2 cups Swiss chard, chopped

1/2 tsp cumin seeds

4 eggs

100g feta cheese

Pumpkin seeds

Seasoning

100ml vegetable stock

Method

Gently sauté the onions and leek. Add the greens, fennel, herbs, seasoning, and cumin. Cook with the vegetable stock for 10 minutes, add the eggs, and cook for 6-8 minutes until cooked through. Crumble feta on top. Sprinkle the Pumpkin seeds and enjoy with a slice of sourdough bread on the side.
