Chilli lamb recipe

This is a super tasty spring inspired dish. Serve with baby new potatoes with garlic and herbs, and a side dish of seasonal greens such as broccoli and green beans. This dish also goes well with a puree, think peas or butternut squash.

Serves 4

Ingredients

8 lamb cutlets/chops.

3 tbsp olive oil

2 red chillies, chopped

4 cloves garlic

1 tsp ground coriander

Juice 1/2 lime

1 tsp ground cumin

1 tsp paprika

Seasoning

1/2 handful of fresh coriander leaves

Method

Preheat the grill to medium-high heat.

In a blender blitz the olive oil, red chillies, garlic, ground and fresh coriander, ground cumin, lime juice, paprika, salt, and pepper.

Spread the spice mixture over the lamb cutlets and place in a grill pan with a little olive oil.

Cook the lamb for about 2-5 minutes per side (depending on how rare or well done you like the meat cooked).

Remove the cutlets from the heat and allow to rest.
