A spring/summer green goodness salad dressing

I am such a lover of greens and this nutrient-dense salad dressing is one of my favourites. You can top your salads with it, I especially love to enjoy it on a black bean, sweetcorn, and tomato salad. I also love to add this green goodness dressing to roasted wild salmon. The dressing also makes a great dip for crudites.

It is so unbelievably good.

Recipe

1/2 cup fresh basil leaves

2 tbsp chopped chives

Handful of fresh parsley

1 chopped spring onion

1/2 ripe avocado

Juice of 1 lemon

1/4 cup kefir

1/4 cup olive oil

1 tbsp apple cider vinegar

Seasoning to taste

Method

Blend all the ingredients in a blender.
