The if in doubt Frittata - for when you don’t know what to cook/you are too tired to think
Eggs are often called nature’s multivitamin because they contain a wide range of essential nutrients, including high-quality protein, healthy fats, vitamins A, D, E, and B12, as well as minerals like selenium and choline, which support brain and liver health. Because of this nutrient density, they make an excellent foundation for meals at any time of day. A frittata is a particularly versatile way to enjoy them, combining eggs with vegetables, herbs, and sometimes cheese to create a balanced, nutrient-rich dish. It can be eaten hot or cold, for breakfast, lunch, or dinner, and easily adapted to whatever seasonal ingredients you have on hand, making it a simple yet powerful way to support overall health and steady energy.
Ingredients (serves 2)
8 organic eggs
50g cheddar cheese
3tbsp milk
A variety of seasonal veggies and herbs you may have to hand, aim for 3-5 different types. You can also add sliced potatoes or cooked meat if you like
Method
Beat the eggs and milk together in a bowl. Add your veggies and herbs.
Melt a little butter in a frying pan. Place the egg mixture, parsley, spinach and courgette flowers into the pan.
Cook at a low heat for 8-10 minutes and the bottom has turned a light brown colour.
