Parsnip and pear soup
This hearty and wholesome bowl of goodness is like a hug in a bowl. As the nights draw in earlier and winter comes knocking, I'm instantly looking for a bowl of soup to provide a warming lift and a well-being boost.
I love to naturally sweeten my root veggie soups with apple or pear. This is a delicious way of adding an uplifting taste and getting more fibre into the diet. This parsnip and pear soup is one of my favourites. With added white beans for a protein boost. This soup uses lots of staple veggies and there's nothing easier than whipping up this mouthwatering homemade delight.
Ingredients
1 large onion
2 celery sticks
1 garlic clove
450g parsnips
1L of stock (I used veggie but you could use homemade chicken stock)
2 pears
A little plant based cream
2 tbsp fresh thyme
1tsp cumin
1/2 cup pre-soaked and pre-cooked white beans
Method
Gently sweat the onions in a little butter with the cumin. Add the parsnips, beans celery, garlic and stock allow to cook through. Peel, core and chop the pears and add. Allow to cool through for 30 minutes. Add a drop of cream and thyme and blitz in a blender.
