Deliciously wholesome mince pie filling recipe

Mince pies are my favourite. I love a good mince pie. This easy to make filling recipe is deliciously festive, full of fibre, and a healthier take on traditional recipes. If there is any filling left over, it makes a delicious Christmas topping for porridge and yogurt.

Ingredients

2 small apples chopped

1/2 cup sultanas

1/2 cup raisins

1/4 cup goji berries

Zest and juice of 1 orange

1/4 cup chopped walnuts

1 tablespoon lemon juice

1/2 tsp ground mixed spice

1/2 tsp ground cinnamon

1/2 teaspoon nutmeg

25g coconut oil

Method

In a pan, combine all the filling ingredients and mix well.

Allow to cook on a medium heat for 15 minutes, or until the apples have softened.
