Easy midweek stir fry recipe

Stir-fries are the weeknight hero of my kitchen. They are fast, fuss-free, and can be adapted to what you have in the fridge and freezer. You can throw in whatever veggies, protein, or leftovers you have on hand, and dinner is ready in under 20 minutes. A great tip is to swap regular noodles for lentil-based ones, giving additional protein and fibre. They’re also naturally gluten-free. I used prawns for their selenium, iodine and zinc content.

Here’s my favourite stir-fry sauce:

4 tbsp soy sauce

1 tbsp honey

1 tbsp fish sauce

1tbsp rice vinegar (for tang)

2 tbsp sesame sauce

2 garlic cloves, diced

2 tbsp grated fresh ginger

½ tsp chilli flakes

Add a little water if the sauce needs.
