Coriander hummus recipe

I love this recipe because it is simple and fuss-free to make at lunchtime. It is also full of plant-based protein and fibre. Coriander hummus is a fresh twist on the classic dip, giving it a herby upgrade. Perfect for snacking, spreading, or spooning straight from the bowl!

Ingredients

1 tin 400g chickpeas, drained and rinsed

1/4 cup tahini

A very large handful of fresh coriander

2 cloves of garlic

3 tbsp lemon juice

2 tbsp olive oil, plus extra for drizzling

1/4 tsp sea salt

Blitz in a blender until smooth. I topped mine with extra extra virgin olive oil, micro herbs, and mixed seeds.
