Summer glow sourdough toast with cottage cheese, nectarines and honey

A simple, nourishing breakfast or lunch that combines healthy fats, protein, and seasonal fruit for steady energy and glowing skin support.

Ingredients (serves 1)

  • 2 slices sourdough bread

  • 1 tsp extra virgin olive oil

  • 100g cottage cheese

  • 1 ripe nectarine, sliced

  • 1 tsp hemp seeds

  • ½ tsp bee pollen

  • Raw honey, for drizzling

Method

Toast the sourdough until golden and crisp. Drizzle lightly with extra virgin olive oil, then spread a generous layer of cottage cheese over the toast. Top with sliced nectarine, sprinkle over the hemp seeds and bee pollen, and finish with a light drizzle of honey.
