Spring seasonal star: Wild garlic salsa verde recipe

Wild garlic season is one of my favourites. I love seeing the carpets of wild garlic happily growing out in the wild. Wild garlic is an excellent source of vitamins A, C, iron, phosphorus, and copper. It boasts similar health benefits to traditional garlic bulbs, such as anti-bacterial properties, and it is supportive of blood pressure reduction.

To celebrate one of my favourite seasons, here is a simple recipe for wild garlic salsa verde. You can use the salsa verde for pretty much anything. It's especially good for topping eggs, meat, or fish. It's a nutritious and ever-so-delicious way to tap into the season.

To make simply blitz in a food processor:

1 cup of wild garlic

3/4 cup of fresh parsley

1.5 cups of olive oil

1 tbsp of apple cider vinegar

1 lemon zest (use unwaxed and organic if possible)

Pinch of sea salt & black pepper to taste
