Simple rosemary chicken one-pot stew

This stew is a rustic, one-pot comfort dish that brings together three simple ingredients: chicken, tomatoes, and rosemary. Using the darker meat in chicken thighs provides extra nutrition, such as iron, compared to chicken breast meat. This dish is perfect for colder nights or when you need a hearty, warming meal without much fuss. Everything comes together in a single pot, which saves on washing up! It’s delicious served with crusty bread or a side of rice.

(Serves 4)

Ingredients

8 chicken thighs

1 brown onion

3 cloves garlic, minced

2 tsp paprika

1 bay leaf

4 sprigs of fresh rosemary

400g tinned tomatoes

1 cup chicken broth

3 anchovies

Seasoning - sea salt and black pepper to taste

Method

To a large pot, Sauté the onion. Add the chicken and brown. Add the rest of the ingredients and allow to simmer for 40 minutes. Check the chicken is cooked through before serving with your choice of sides.
