Menstrual phase Black bean and beetroot brownie

Black beans are little nutritional powerhouses. They are an excellent source of plant-based protein, packed with fibre and full of iron, magnesium, and zinc, all important for energy and to support the menstruation phase of your cycle. Plus, they taste so good! They are a staple in my kitchen, and I love to make a batch of these brownies every couple of weeks. You would never know these brownies have black beans in them; they are so fudgy. These brownies are also naturally gluten-free.

INGREDIENTS

  • 400g black beans, drained and rinsed

  • 3 large eggs

  • 3 tbsp coconut oil

  • 20g cocoa/cacao powder

  • 1 small beetroot

  • ½ tsp baking powder

  • 110g coconut sugar

  • Pinch of sea salt

INSTRUCTIONS

  1. Preheat oven to 180°C and grease or line a small square baking tin.

  2. Add all ingredients to a food processor or blender. Blend until completely smooth.

  3. Bake for 20 minutes or until the centre is set and an inserted skewer comes out clean.

  4. Cool completely before slicing (they firm up as they cool).
