Spicy bean stew recipe topped with halloumi

Every household needs to have a few good bean dishes in their recipe books. This dish is ready in 20 minutes and is fibre full, rich in protein, vitamins, and budget friendly.

This bowlful is utterly delicious and super easy to make. Using store cupboard ingredients with minimal effort. What more could you ask for on a meat-free evening?

Serves 3

Ingredients

Olive oil

1 onion diced

1 red pepper thinly sliced

2 crushed garlic cloves

1/2 tsp red chilli flakes

1/2 tsp cinnamon

1 tbsp fresh dill, plus extra to serve

400g tin butter beans, rinsed and drained

400g cannellini beans, rinsed and drained

1/2 lemon

225g halloumi sliced

Method

Sauté the onions and pepper over a medium heat with a little oil. Add the garlic. Add in the beans, tomatoes, dill, lemon juice, and 1/2 tin of water. Simmer and cook for 10 minutes.

In a separate pan, add a little oil and the sliced halloumi. Cook the halloumi for 2 minutes on each side or until golden brown.

Season the beans to taste. Scoop them into bowls and place the halloumi on top. Sprinkle some fresh chopped dill on top. Enjoy!
