Midweek dinner: Mushroom dahl recipe

Easy peasy midweek dinner recipe. I get you. The last thing you want to do after a long day is cook from scratch. But home cooking needn't be complicated. This mushroom dal recipe is perfect for this time of the year and takes 30 minutes to create. 


(Serves 2)

Ingredients

2 onions sliced

1 garlic clove crushed and chopped 

100g dried red lentils (rinsed)

400g tinned lentils (rinsed)

1 tbsp curry powder 

1/2 chopped red chilli

2 cm fresh ginger root diced

Large handful of coriander chopped

150g mushrooms chopped

50g solid creamed coconut (warmed in its packet in a cup of boiling water)

350ml boiled water with 1 @kallo organic mushroom stock cube


Method

On a baking tray place half the onions and mushrooms with a little seasoning and a drizzle of olive oil. Place in a preheated oven at 180c for 15-20 minutes until browning. Remove once done.

While the mushrooms and onions are cooking add to a pan, the remaining onions, garlic, lentils, ginger, curry powder, coconut, and stock. Allow to cook for 30 minutes.

Serve the dahl in a bowl. Top with the roasted onions and mushrooms, the chopped chili, and a good sprinkle of coriander.
