Skin focus: glow boosting zesty baked mackerel recipe

Roasted Mackerel

This is a really simple dish that packs a powerful anti-inflammatory and glow boosting punch. Mackerel is a great source of omega 3. Not only is this essential fatty acid wonderful for our general health, it is also great for our skin. Omega 3 helps to increase hydration from within and lowers inflammation.

I like to serve mine with a side of seasonal veggies or leafy greens and some rosemary roasted potatoes.

Recipe

(Serves 4)

4 fresh whole Mackerel - sustainably sourced - gutted and prepared

6 bay leaves

Seasoning

1 lemon sliced

3 sprigs of rosemary

Extra virgin olive oil

Method

Pre heat the oven to 180c. Add the fish to an oven proof dish. Arrange the ingredients on top, and drizzle with olive oil. Place in the oven for 25 minutes to roast.
